Ah, the cool rainy (and sometimes sunny) days of Oregon fall have finally arrived. As much as I love the warmth of summer, the cooler months encourage me to relax and enjoy the simple pleasures a little but more. One of those simple pleasures is soup. This 20 Minute Lentil Soup is perfect for a crisp, cozy weeknight.
This recipe is so simple. You don’t always need a ton of ingredients to produce a flavorful, nourishing meal. Also, this soup is so cheap to make. Budget eats can be delicious, nutritious, and feed a whole family! What sort of autumn stews or soups are you making?

20 Minute Lentil Soup
Ingredients
- 1 Tbsp. olive oil
- 1 Cup Carrots, diced
- 3/4 Cup Celery, diced
- 1 Cup Yellow onion, diced
- Salt and pepper
- 2 tsp. Cumin
- 1 Bay leaf
- 2 Cups Vegetable Broth
- 2 Cups Water
- 1 Cup Red Lentils
- Parsley for garnish*
- Lemon juice for garnish
Instructions
- In a large pot or dutch oven, heat olive oil over medium heat. Add in carrot, celery and onion and sautee for about 3-5 minutes, until soft.
- Season with salt, pepper and cumin, stirring a couple times. Increase heat to medium high and add bay leaf, vegetable broth, water, and lentils.
- Stir until well mixed and let it come to a soft boil. Cover, reduce to low, and let simmer for 12-15 minutes. Lentils should still be in tact. If you would like a thicker soup, remove lid and let simmer for a few more minutes.
- Serve warm with fresh parsley or gremolata and fresh squeezed lemon juice.*

Congrats on the recipe index, making one of those and organizing by category was a lot of work for me (I did them for recipes, sewing projects, and tutorials) but SO useful and worth it!
