Continuing on with this mini-series of great vegetable side dishes, I bring you the humble potato. I love how versatile potatoes are and how they marry so well with so many different flavor combinations. Not everything needs to be complicated, and these garlic dill roasted potatoes are easy to make, and addicting to eat!
One of my go to’s is some sort of roasted root vegetable with fresh herbs, and that alone means the options are endless. I feel like dill is under appreciated at times, but it has a certain freshness to it that lightens up a dish.
These potatoes roast up with crispy exteriors and soft insides thanks to the parboil step. It may require an extra pot, but it makes the texture perfect and prevents the potatoes from drying out in the oven. What are some of your favorite ways to cook up roasted veggies?
Garlic Dill Roasted Potatoes
Ingredients
- 1 lb Baby potatoes
- 2 Tbsp. olive oil
- 2 Tbsp. Fresh dill, chopped
- 1/8 tsp. Fresh ground black pepper
- 1/4 tsp. salt
- 3 Garlic cloves, minced
Instructions
- Preheat oven to 425 degrees F and line a baking sheet with parchment paper.
- Fill a large pot with water and bring to a boil over high heat. Cut baby potatoes into quarters and place in boiling water. Cook for 8 minutes.
- Strain and place potatoes in large bowl. Drizzle with olive oil and add salt, pepper, garlic and fresh dill. Mix until the potatoes are well coated.
- Spread into a single layer on prepared baking sheet. Bake at 425 for 20-22 minutes stirring once about halfway through. Potatoes should be browned and crispy on the outside. Remove from oven and serve hot.

January 22, 2018We make potatoes like this all the time, except we use rosemary instead of dill. That sounds like a great option though: I’ll have to try using dill next time I make them.
