‘Tis the season for…latkes! Ok, so I’m not a latke expert and haven’t made them in years, but I was wanting to try something a little different with my sweet potatoes, and this is what happened. Such an enjoyable change from my go-to roasted sweet potato with salt and pepper. And best of all, these sweet potato latkes are so easy to make.
I love sweet potatoes. They’re hearty, filling, creamy, and they can hold so many different kinds of flavors. I am always looking for more vegetable/carb side dishes to throw in my arsenal and I think I will keep this one around. It’s incredibly flavorful and don’t need to be pan fried in order to turn out well (though that is always another option!).
I decided to kick these up a notch with some chili powder and paprika, and I think these spices work really well with the fresh zing of the green onions. These latkes are not spicy, they just have a nice subtle heat. Serving these alongside a little sour cream or plain greek yogurt pairs well with the heat and the sweetness of the potato. Next time you need a simple but delicious side, try this out!
Baked Spiced Sweet Potato Latkes
Ingredients
- 1 pound Sweet potato, peeled and shredded
- 2 Green onions, chopped
- 1 Egg
- 1/4 cup All-purpose flour
- 1/4 tsp. Salt
- 1/4 tsp. Black pepper
- 1/2 tsp. Chili powder
- 1/4 tsp. Paprika
- Sour cream or plain Greek yogurt (optional)
Instructions
- Preheat oven to 425 degrees F and grease a cookie sheet. In a bowl, combine all ingredients except for the sour cream/yogurt.
- Roll mixture into balls and place on cookie sheet. Flatten to about 1/4 inch thickness.
- Bake in oven for 10 minutes, then flip each latke with spatula. Put back in oven and cook for another 8-12 minutes until firm. Serve alongside sour cream or greek yogurt.
