One of my favorite parts of the summer is the fresh berries. Berries for breakfast, berries for lunch, berries for dinner. All of them. However, I tend to make a LOT of sweets with said berries, so I thought I’d make a savory dinner dish to use them, so here is the Pork Tenderloin with Raspberry Chipotle Sauce.

Not only is this really easy to make, but it’s delicious. I love the combination of sweet and spicy, and the chipotle peppers adds a wonderful smoky flavor too. I find fruit and pork to go really well together in general, though you could also use this sauce on chicken or salmon if you prefer. Also, you could totally grill the pork rather than using the cast iron pan since it is summertime, though the timing will vary. Pork Tenderloin with Raspberry Chipotle Sauce

This Pork Tenderloin with Raspberry Chipotle Sauce is a great summertime meal. Fresh berries add sweetness and the chipotle is smoky with a hint of spice.
Servings 6 Servings

Ingredients

  • 1 Tbsp. olive oil
  • 3-4 lb. Pork tenderloin
  • Salt and pepper
  • 6 oz Fresh raspberries
  • 1-2 Chipotle peppers in adobo sauce, diced (canned)
  • 1 Garlic cloves, minced
  • 2 Tbsp. Honey
  • 1 Tbsp. Water
  • 1 tsp. Apple cider vinegar

Instructions

  • Preheat oven to 350 degrees. In a large cast iron skillet, heat oil over medium high heat. Season pork tenderloin with salt and pepper.
  • Sear pork for 7 minutes on each side. Then place in oven and finish for about 25 more minutes, until the internal temperature reaches 165 degrees F.
  • While the pork is in the oven, combine the raspberries, chopped chipotle peppers, minced garlic, honey, water and vinegar in a small sauce pan.simmer on medium low for about 10 minutes, mashing the berries halfway through.
  • When pork is done, let rest for 5 minutes before slicing. Serve with raspberry chipotle sauce spooned over the pork.
