Sweet potatoes are one of those foods that I could eat every day. And sometimes I do. They’re extremely filling, flavorful, and versatile. Another thing I love are tacos. So why not combine them! These spicy sweet potato black bean tacos are such a satisfying meal and will leave you feeling full and happy.
The combination of sweet potatoes and black beans make for one of the most energy inducing meals ever…in my opinion. Carbs and proteins and it’s all pretty simple. These tacos are perfect as a meatless taco alternative, as well as a quick weeknight dinner. I mean, you have to chop a few things but it’s cooked and ready in under ten minutes. How awesome is that!?
You can adjust the spice level (chili powder and jalapeño) to your liking, but the play between the sweet sweet potato and the spice is really what this is all about. My go to quick pickled red onion recipe is this one. Also, if the mixture starts to get a little dry, add a tablespoon of water to help reconstitute all those flavors. Enjoy!
Spicy Sweet Potato Black Bean Tacos
Ingredients
- 2 1/2 Cups Sweet potato, diced
- 1 Can Black beans, drained and rinsed
- 1 Jalapeno, chopped
- 2 Tbsp. olive oil
- 1/2 tsp. Chili powder
- 1/4 tsp. Cayenne Pepper
- 1/4 tsp. Garlic Powder
- 1/2 tsp. Cumin
- Salt and pepper to taste
- 12 Corn tortillas
- 1 Bunch Cilantro
- 1 Cup Corn kernals
- Pickled red onions
Instructions
- In a large skillet, heat olive oil over medium high heat. Add diced sweet potatoes and cook for about 6 minutes, stirring a couple times.
- Reduce heat to medium and add jalapeno, black beans, spices, and salt and pepper to taste. Cook for 2 minutes, until everything is heated through. Remove from heat.
- Fill warm corn tortillas with the sweet potato black bean mixture, and top with corn, pickled red onions and cilantro, or your own favorite toppings.
