Rice krispie treats. Such a simple, satisfying, yummy bar of goodness. They are one of those things that I don’t usually crave, or even think about, but if I am reminded of their existence, I get really excited about them. This recipe for brown rice rice krispie treats really isn’t anything too wild or out there, but man does it satisfy a rice cereal treat craving!
For these, I used Nature’s Path Brown Rice Cereal. I did this partially to try and convince myself these were “healthy,” but also, because that cereal tastes really good. Like, seriously, just like how brown rice has more flavor than most white rices, I think it’s the same with cereal. It’s a bit more…wholesome, and for me, I think that tastes delicious.
While it is evident from this title that these include brown rice cereal, the hidden addition to these is using browned butter. I love browning butter any chance I get. It’s sort of crazy how nutty and savory the butter can get by cooking it a little bit longer than you’d think to. You can see here the little brown specks on the rice krispie treat – that is the sign of browned butter. I love browned butter in these treats because it helps mellow out the mallows. It makes the treats more complex and yummy rather than just cloyingly sweet.
A fun surprise when I was making these was that a large portion of the bag of mini marshmallows had been improperly cut! There were tons of little clusters of threes. When I saw them, all I could think of was shamrocks! So I dunked them in some sprinkles and used them to decorate. A little but make shift, but hey, I think it’s a festive idea. 🙂

Brown Rice Rice Krispie Treats
Ingredients
- 3 Cups Brown Rice Cereal
- 2 Tbsp. Butter
- 2 1/4 Cups Mini mashmallows
Instructions
- Over medium heat in a saucepan, melt the butter. Once the butter is melted, continue cooking, stirring frequently until butter is browned. Add marshmallows and stir until melted, about 2-3 minutes.
- Remove from heat and gently stir in brown rice cereal. Line 8x8 inch pan with parchment paper and press mixture to the edges. Let sit for a few minutes, cut, serve, eat.
