Brussels sprouts are by far my favorite winter vegetable. Perhaps it’s because I can only get good fresh ones here for a short part of the year, and that makes them a bit more special, but I do truly l think they taste good. Saffron Rice with Dried Fruit
I could probably eat rice for every meal, and never get tired of it – even white rice made with nothing else but water. But while that may be possible, it is so nice to mix up the side dishes to my quick dinners to add extra pops of flavor. Lemon Sesame Roasted Sweet Potatoes
If I could eat sweet potatoes 7 days a week, I would be so, so happy. They are so versatile, and easy to prep! My favorite way to make them is roasting them in the oven. Perhaps this is the “lazy” way, but I find it to be a pretty foolproof way to get them soft and cooked through, but also browned with a bit of texture on the outside. These Lemon Sesame Roasted Sweet Potatoes are a super simple, easy, and delectable version of my go to side dish.
