Let me begin by saying that this is one of the most perfect crockpot recipes that I have ever encountered, made, and subsequently devoured. It is warming, spicy, tangy, and unbelievably tasty. This yummy Chicken Tikka Masala recipe – in the slow cooker – came to me from Table For Two Blog.
The ingredient list may seem long, but most of them are spices so it’s really not very complicated. The most time consuming part of this recipe is the prep of cutting 3 pounds of chicken – but that’s it. For the sake of making my morning easier when I’m throwing this together, I like to cut the chicken and onion the night before and toss it in a gallon size ziplock, and put it in the fridge. It creates the illusion of a dump meal once you’re ready to put it together! Also, the fact that you don’t need to precook anything makes this recipe wonderful because, well, that’s at least one less dish to wash. And I love it when the crockpot can do the work for me.
Another bonus? It freezes really well! I find that this makes about 10 servings, which means there are always leftovers. I like to freeze 2-4 portions the same day I make it and enjoy the rest throughout the week. The frozen servings make great quick weeknight meals or a lunch when you realllllly need to go grocery shopping and don’t have much to work with.
Serve this over a bed of white or brown rice and a side of veggies and you have a flavorful and delicious meal. The last time I made this I also tried my hand at homemade naan, a recipe I wrote about here. It’s a little extra work, but since the crockpot is doing the cooking all day, it makes for a fun addition to the dish.
