One of my favorite things about summer is making salsa. Pico de gallo, tomatillo, black bean, watermelon (I promise it’s amazing!), and mango salsas just to name a few. Many times in my life I have made a salsa bar for dinner where fresh salsas and chips were all that were eaten. And to this day, those were some of my favorite meals. So, to get you started on your own summery salsa kick, I whipped up this Mango Jalapeno Salsa.
The wonderful thing about this salsa is how sweet and spicy it is all at once. I love mangoes because of their dense sweetness-they’re like candy. And paired with a hot pepper, the flavors bounce off each other so well! The other goodies add some nice additional flavors that help balance and round the whole thing out, but the contrast of sweet and spicy is the best part of this. You can of course adjust the amount of jalapeno you use based on your personal spice preference.
You can make this for your salsa bar, or use it as a dressing/sauce/side to an entree. Some of my favorites to serve it with include grilled chicken, coconut shrimp, or some salmon. This Mango Jalapeno Salsa can turn any meal or evening into a summery, tropical delight, and I hope you enjoy it!
Mango Jalapeno Salsa
Ingredients
- 1 Mango, chopped
- 1 Jalapeno, de-seeded and finely diced
- 1/3 Cup Red bell pepper, diced
- 1/3 Cup Red Onion, diced
- 1/4 Cup Cilantro, chopped
- 1/2 Lime, juiced
Instructions
- Chop all of the ingredients (except the lime) into roughly the same size pieces. Put into a bowl and squeeze lime juice over it. Mix well.
