I’m working on highlighting some delicious side dishes this month because I feel like they are often overlooked and under-appreciated. I whipped up this refreshing orange pistachio salad over the weekend and honestly could have eaten many servings of it. It is light and really highlights the powerful flavor of winter oranges.
Truth be told, I did eat this as an appetizer before indulging in a burger, but you know what, this was such a yummy way to enjoy some greens. Not all salads need to be entree size or complicated. Letting a few in season ingredients shine can lead to something wonderful too. Also, making a salad that resembles a sunflower makes eating your greens that much more cheerful, especially on a gloomy winter day. Happy eating!
Orange Pistachio Salad
This delightful orange pistachio salad is the perfect accompaniment for any dinner. Perfect as a side dish or appetizer with a delicious orange vinaigrette.
Servings 4 People
Ingredients
Salad Dressing
- 1 1/2 Tbsp. Fresh squeezed orange juice
- 1/2 Tbsp. Apple cider vinegar
- 1 Tbsp. Olive oil
- 1 tsp. Honey
Salad
- 4 oz Mixed salad greens
- 1/4 Cup Pistachios, shelled
- 2 Oranges, segmented
Instructions
- In a small bowl or jar, combine the salad dressing ingredients and stir until mixed.
- Put the salad greens in a large bowl. Pour 1/2 of the dressing over the greens mixing to coat. Add more dressing if desired.
- Place greens on plate and garnish with segmented oranges and pistachios.
