I enjoy refreshing cocktails in the summer because of the abundance of fresh fruits and herbs. Pimm’s Cups are the (un)official beverage of Wimbledon and are more popular in the UK than the US. But what they are, are delicious. Light and fruity but without the cloying sweetness of simple syrup or loads of added sugar. And when it’s in the 90’s-100’s in the late summer, Pimm’s Cup Popsicles are an excellent way to cool down.
This recipe came to be by a request of a friend, and I’m so glad I finagled the ingredients so that it actually works! I was recently gifted these awesome Zipsicles, but you can use the popsicle mold or ice cube trays of your choice. These Pimm’s Cup Popsicles are made with a lemonade base. However, if you’re a fan of that ginger beer base Pimm’s, add a small piece of ginger to the mixture during the infusion process. That will give it that extra kick. I hope you enjoy these refreshing pops as we enter into the final month of summer!
Pimm's Cup Popsicles
Ingredients
- 1/2 Cup Pimm's No. 1
- 1 Cup Lemonade
- 1/2 Cup Sliced or diced cucumber
- 8 Mint leaves, crushed
- 4 Strawberries (optional)
Instructions
- Place Pimm's, lemonade, cucumber, mint and one sliced strawberry in a bowl or large glass. Stir, muddle the mint and cucumber a little bit, and let sit at room temperature for 30 minutes.
- After 30 minutes, give it a stir and taste to make sure it is the proper sweetness (see note below). Strain the cocktail into a pouring vessel. Carefully pour Pimm's Cup into popsicle molds of your choice placing strawberry slices in the mold if you'd like. Freeze for at least 4 hours. Enjoy!
