Here we are, at the final day of Cookie Week 2017! I’m leaving you with the cookie recipe I think I have made the most this season: Triple Chocolate Peppermint Cookies. Yes, they do have three chocolates in them. No, that is not too many.
Dark Chocolate, milk chocolate, and white chocolate. I think that just about covers it, right? The nuances of these different types of chocolate prevent these cookies from being too rich or too overpowering. Each type contributes their own flavors and sweetness to the cookie. These are a slight variation of my Mint Chocolate Cookies, another amazing recipe I recommend you try! I am a sucker for chocolate mint pairings, so I wouldn’t be surprised if I came up with another version next year. Happy (holiday) baking!
Triple Chocolate Peppermint Cookies
Ingredients
- 1/2 Cup Butter
- 1/3 Cup white sugar
- 2 Tbsp. Brown sugar
- 1 egg
- 1 tsp. Vanilla extract
- 1 cup all-purpose flour
- 1/3 Cup Dark Chocolate Cocoa powder
- 1/2 tsp. Baking soda
- 1/8 tsp. salt
- 1 Cup Mini chocolate chips
- 1 Cup White chocolate (for melting)
- 1/4 Cup Crushed peppermint candy
Instructions
- In a large bowl, cream butter, white sugar and brown sugar until fluffy. Mix in eggs and vanilla.
- In a small bowl, combine flour, cocoa powder, baking soda and salt. Stir flour mixture into butter mixture until it forms a firm dough.
- Mix in mini chocolate chips. Cover a refrigerate for 1 hour.
- Preheat oven to 350 degrees F. Roll dough into small balls and place on ungreased baking sheet. Bake for 9 minutes. Let cool on cookie sheet before transferring to wire racks.
- Meanwhile, melt white chocolate over a double broiler or in the microwave. Spoon a half tablespoon or so onto the tops of each cookie. It should thicken like frosting.
- Before it hardens, sprinkle crushed peppermint on top. Store in an airtight container for up to 5 days.
