Another day, another cookie recipe! But this post is about much more than just holiday baking, like the fact that today is this blog’s 1st birthday! Hooray! I wanted to say thank you to all of you who have been reading my blog, cooking these recipes, telling me what you think, hanging out with me over on my Instagram, and so much more. This is a fun side project for me, and I absolutely love sharing all these recipes with you. And so, onwards to talk more about these cute and simple two bite sprinkle cookie sandwiches that are perfect for any occasion.
For me, holiday baking has always been a combination of a whole lot of reasons to celebrate and eat goodies. Within my immediate family of nine, there are FOUR December birthdays! Two of which are on Christmas Eve, as well. Because of this, it makes this time of year extra special for my family and I as we make sure everyone has their special birthday moments amongst our Christmas traditions. And so, just like how I’ve been jumping back and forth between birthday excitement and Christmas anticipation this season, I thought I’d share with you these extremely versatile cookies!
They’re simple and succulent butter cookies sandwiched together with a touch of chocolate (think of a soft Milano cookie). But the two details that make these cookies extra fun are the sprinkles, and the fact that they are bite size! These are rolled out to be about the size of a quarter making them really easy to snack on, and mildly addicting. The sprinkles give them a great burst of color, and also let’s you completely customize them based on your reason for celebration on that particular day.

Two Bite Sprinkle Cookie Sandwiches
Ingredients
- 1 Cup Butter, softened
- 1/2 Cup Brown Sugar
- 1/4 Cup White Sugar
- 1 Egg
- 1 tsp. Vanilla Extract
- 2 14 Cups All-purpose flour
- 1/2 tsp. Baking Powder
- 1/2 tsp. Salt
- 1/2 Cup Chocolate chips
- 1/3 Cup Sprinkles of choice
Instructions
- In a large bowl, cream the butter and sugars together. Then mix in the egg and vanilla.
- Add in the flour, baking powder and salt slowly, stirring until the dough is well combined. Cover bowl and place in refrigerator for 1 hour.
- Preheat oven 350 degrees F. and line baking sheet with parchment paper.
- Roll about 1 tsp. of dough into little balls and place on baking sheet. Then gently press each one down to slightly flatten.
- Pour sprinkles into a small bowl. Dip one side of each cookie into sprinkles, and return to baking sheet. Once they have all been sprinkled, place in oven and bake for 6 minutes.
- Remove from oven and let cool on baking sheet for about 2 minutes before removing.
- Once cookies are cooled, melt the chocolate over a double broiler or in a microwave. Put 1/2 tsp. of chocolate on the non-sprinkled side of half of the cookies, and sandwich it with a second cookie. Continue until they have all been sandwiched.
- Let sit for about 15 minutes for the chocolate to set, then enjoy!
