Having lived in Hawaii and the Pacific Northwest, I have been lucky to always have easy access to fresh salmon. It is my favorite fish to cook at home because I find it to be forgiving, and it doesn’t require very many other ingredients because it has such a rich flavor itself. This 15 Minute Baked Salmon is my go to recipe for a quick weeknight dinner.
This recipe really evolved by tossing things together. The measurements are approximate and you can increase or decrease as you wish. I usually don’t measure when I throw this together because there is no science to it. The best thing about this recipe is how fast it is to put together! I love having quick recipes on hand so that I have some go-to’s during particularly busy weeks. It really only takes 15 minutes altogether – longer than it may take to even whip up a side of quinoa!
Butter + Garlic + Dill + Lemon is my favorite flavor combination with salmon, but I also think it’s perfect for all sorts of different fish. You can mix and match this recipe with a different fish or a different herb, and it will be just as delicious and simple. Enjoy!
15 Minute Baked Salmon
Ingredients
- 1 lb. Fresh salmon fillet
- 2 Tbsp. Butter
- 3 cloves Garlic, minced
- Salt and pepper
- 1 1/2 Tbsp. Fresh dill, chopped
- Juice of 1/2 lemon
Instructions
- Preheat oven to 400 degrees F and line a baking sheet with foil.
- Place butter and minced garlic in a small bowl. Microwave for about 30 seconds, or until butter has melted and garlic is fragrant.
- Season salmon with salt and pepper and pour garlic butter mixture evenly over the fish. Top with chopped dill.
- Bake in 400 degree oven for about 12 minutes, until salmon reaches an internal temperature of 145 degrees.
- Remove from oven and squeeze the juice of 1/2 of a lemon over the salmon. Cut into 4 portions and serve hot.
