I don’t know about you, but the crisp mornings have arrived, but I still have a fridge full of stone fruit. Is it summer? Is it fall? I don’t know! But what I do know, is that these Brandy Lemon Baked Plums satisfy the neverending fresh fruit cravings of summer, and the cuddly, warmth of fast approaching autumn. Sometimes being stuck in the in between in a tasty place to be.
With only four ingredients and less than 15 minutes, these baked plums are amazing beyond just the way they taste. Quick, simple, and absolutely scrumptious. I like my baked plums to still hold a bit of their shape, but if you want yours a bit more melty, just extend the bake time. I am going to miss the sun greatly, but am definitely feeling ready for some rain and oven fresh treats. Are you looking forward to fall or sad to see summer go?
Brandy Lemon Baked Plums
Ingredients
- 4 Ripe plums, halved and pit removed
- 2 Tbsp. Brandy
- 1/4 Cup Brown Sugar
- 2 tsp. Lemon zest
Instructions
- Preheat oven to 400 degrees and line a baking dish with foil. Place plum halves cut side up in the dish.
- Drizzle the brandy over the tops of all 8 halves. Then top with a generous amount of brown sugar and 1 tsp of lemon zest.
- Bake at 400 degrees F for 5 minutes. Then, turn your oven to broil, and broil for 5-8 minutes, until the sugar begins to brown and bubble.
- Remove from oven, top with remaining lemon zest. Serve warm with fresh whipped cream or vanilla ice cream.
