Baked Cauliflower Cheddar Fritters

Cauliflower is one of those foods that is so good for you and that I’m always open to eating, but enjoy it in more…creative ways. These fritters are definitely one of those “creative” ways to enjoy some of your abundance of cauliflower! Baked cauliflower cheddar fritters are a slightly healthier option, but 100 percent tasty.

Baked Cauliflower Cheddar Fritters

These are basically cauliflower and cheese, and how can you go wrong there?! I have made these both pan fried and baked and personally, I prefer the baked method. When you bake it, the cheese gets that really amazing taste like the bits of cheese that ooze out of a grilled cheese and cook on the pan. And also, less grease means you can taste the other ingredients a whole lot better!

For this recipe I used some brilliantly orange cauliflower because that is what I had, so if you use the traditional white, yours will likely look a bit different in color. If you’re looking for a little extra spice, you can add some cayenne powder. Or if you have some other type of yummy cheese in your fridge, you can substitute that for the cheddar or parmesan. Servings 8 Large fritters

Ingredients

  • 12 oz Cauliflower florets
  • 3/4 Cup Grated cheddar cheese
  • 2 Tbsp. Grated Parmesan Cheese
  • 2 Tbsp. Sliced scallions
  • 2 Eggs
  • 3/4 Cup Panko Bread crumbs
  • 1/4 tsp. Garlic Powder
  • Salt and pepper to taste

Instructions

  • Preheat oven to 425 degrees F and line a baking sheet with parchment paper.
  • Steam cauliflower florets for 8-10 minutes until tender. Let cool for a minute and then chop finely into small pieces.
  • Place cauliflower in bowl and add all other ingredients stirring gently with a spatula or spoon until combined.
  • Form mixture into patties about 2 inches wide and a 1/4 inch thick. Place on parchment lined baking sheet.
  • Bake in preheated oven for 14 minutes, flipping once halfway through. Remove from oven and serve warm.

Notes

*You may also pan fry the patties over medium high heat for 2-3 minutes on each side.

    I love making cauliflower fritters and sadly can’t have dairy or else I would totally be making these cheddar cauliflower fritters as well. They look so good! Love the golden color the cheese adds to it!

      You can make this without the cheese with a little extra spice and breadcrumbs! The golden color also comes from the gorgeous orange cauliflower I used!

    Fritters aren’t always the most photogenic of foods, but these are beautiful! I’m not usually a big cauliflower fan, but cheese makes everything delicious, so I would definitely be willing to give these a try.
