Baked Cauliflower Cheddar Fritters
These cauliflower fritters make a great appetizer or side dish. A healthier take on the fritter and full of deliciously satisfying cauliflower.

Ingredients

Cauliflower florets
3/4
Cup
Grated cheddar cheese
2
Tbsp.
Grated Parmesan Cheese
2
Tbsp.
Sliced scallions
2
Eggs
3/4
Cup
Panko Bread crumbs
1/4
tsp.
Garlic Powder
Salt and pepper to taste
Instructions
Preheat oven to 425 degrees F and line a baking sheet with parchment paper.
Steam cauliflower florets for 8-10 minutes until tender. Let cool for a minute and then chop finely into small pieces.
Place cauliflower in bowl and add all other ingredients stirring gently with a spatula or spoon until combined.
Form mixture into patties about 2 inches wide and a 1/4 inch thick. Place on parchment lined baking sheet.
Bake in preheated oven for 14 minutes, flipping once halfway through. Remove from oven and serve warm.
Notes
*You may also pan fry the patties over medium high heat for 2-3 minutes on each side.
