I enjoy refreshing cocktails in the summer because of the abundance of fresh fruits and herbs. Pimm’s Cups are the (un)official beverage of Wimbledon and are more popular in the UK than the US. But what they are, are delicious. Light and fruity but without the cloying sweetness of simple syrup or loads of added sugar. And when it’s in the 90’s-100’s in the late summer, Pimm’s Cup Popsicles are an excellent way to cool down.

I have been compulsively buying every fresh berry that I see at the farmer’s market, but that means I have to keep on mixing it up and make different goodies with them! Flourless Peanut Butter Cookies with Dark Chocolate
I wouldn’t say I’m a peanut butter fiend. It’s not something I really LOVE, but I do enjoy it. But somehow, throughout my life, peanut butter cookies have sort of been my thing. But this go around, I decided to try something different – I left out the flour. And then I covered them in dark chocolate. The result, are these absolutely divine Flourless Peanut Butter Cookies with Dark Chocolate.
Rhubarb Chocolate Brownies
So I had a conundrum the other day. I was craving something chocolatey, but I also had an abundance of rhubarb to use. At first I thought I’d make rhubarb chocolate chip cookies, but that didn’t seem chocolatey enough. Then I thought of a cake, but what would I do with an entire cake? (other than eat it). But brownies – brownies seemed just perfect. So I whipped up these Rhubarb Chocolate Brownies and solved my conundrum.
