I eat salads almost religiously for lunch Monday through Friday. It’s not forced though. The truth is, I love salads. I’ll blame my mom for this – she has a salad recipe arsenal that would satisfy any craving. I do sometimes get bored of a certain kind of salad, so I like to mix things up and make something different every now and then.
