Saffron Rice with Dried Fruit
I could probably eat rice for every meal, and never get tired of it – even white rice made with nothing else but water. But while that may be possible, it is so nice to mix up the side dishes to my quick dinners to add extra pops of flavor. Lemon Sesame Roasted Sweet Potatoes
If I could eat sweet potatoes 7 days a week, I would be so, so happy. They are so versatile, and easy to prep! My favorite way to make them is roasting them in the oven. Perhaps this is the “lazy” way, but I find it to be a pretty foolproof way to get them soft and cooked through, but also browned with a bit of texture on the outside. I feel like here on the west coast we get decent avocados for a large portion of the year, I had never put two and two together that late summer was when they were their tastiest. Peach Jalapeno Jelly
We have found ourselves knee deep in peach season, friends! I’m so picky about peaches – as much as I love them, I will only enjoy them at the peak of the summer when you can smell the sweetness before even cutting into them. But if you find yourself with a few extra peaches, and want a different way to enjoy them, this Peach Jalapeno Jelly (pectin free!) will help extend peach season into the fall.
