I absolutely love chili. In the cold, darker months, I love how hearty, spicy, sweet and yummy chili is. I also really love squash. Winter squash is amazingly multi-purpose and you can toss it an endless amount of things. It brings with it a unique sweetness, and some hearty vegetable. This Crockpot Butternut Squash Turkey Chili is a lazy way to enjoy the rain and cool air while staying cozy at home.
I don’t experiment much with crockpot recipes. Don’t get me wrong, I love my crockpot and I do make quite a few things with it, but I don’t usually develop recipes for it. I use other people’s. 🙂 But at this point, I’ve probably altered my favorite crockpot chili recipe to the point that it is nothing like the original recipe I used. And throwing in squash tweaks it even more where I feel like I should let you all know about this yummy chili. I hope you enjoy it!
Crockpot Butternut Squash Turkey Chili
Ingredients
- 1 Pound Ground turkey
- 1 Cup Yellow onion, diced
- 1 Cup Celery, diced
- 2 Cloves Garlic, minced
- 1 Jalapeno, chopped
- 2 Cups Butternut squash, diced
- 1 15 oz Can Kidney beans (with liquid)
- 1 10.75 oz Can Tomato Puree
- 1 14.5 oz Can Diced Tomatoes, fire roasted
- 4 tsp. Chili powder
- 1 tsp. Cumin
- 1 tsp. salt
- 1/2 tsp. Black pepper
- 1/2 tsp. Dried parsley
- 1 tsp. Dried basil
- 1 tsp. Dried oregano
Instructions
- In a skillet, cook up ground turkey for about 6 minutes, until it is cooked through and browned.
- Add cooked turkey to the crockpot and add all of the other ingredients. Stir until everything is well combined. It may seem dry, but the vegetables will add more liquid as it cooks.
- Set crockpot on low and cook for 8 hours. Serve with cilantro, green onions, cheddar cheese, sour cream, or jalapenos for garnish.

October 28, 2017Hi!! I am making this today but I have a bunch of delicata squash so I figured I would use that. Question – do you think I should peel the skins off the squash or just cube it all up and throw it in?
