Ingredients
1PoundGround turkey
1CupYellow onion, diced
1CupCelery, diced
2ClovesGarlic, minced
1Jalapeno, chopped
2CupsButternut squash, diced
115 oz CanKidney beans (with liquid)
110.75 oz CanTomato Puree
114.5 oz CanDiced Tomatoes, fire roasted
4tsp.Chili powder
1tsp.Cumin
1tsp.salt
1/2tsp.Black pepper
1/2tsp. Dried parsley
1tsp.Dried basil
1tsp.Dried oregano
Instructions
In a skillet, cook up ground turkey for about 6 minutes, until it is cooked through and browned.
Add cooked turkey to the crockpot and add all of the other ingredients. Stir until everything is well combined. It may seem dry, but the vegetables will add more liquid as it cooks.
Set crockpot on low and cook for 8 hours. Serve with cilantro, green onions, cheddar cheese, sour cream, or jalapenos for garnish.
