I often default to rice when I don’t know what to make for dinner, but rice noodles are a way for me to feel like I’m mixing it up, but not exerting any additional energy. The key to the tastiness of this dish, and especially the shrimp, is the dressing and marinade. The trick is to use more ginger than you think you need. When you think it’s enough, add more. The potent ginger flavor helps to balance the saltiness of the soy sauce, and brightens up the sesame flavor from the sesame oil. If you’re looking for some heat, add a sprinkle or two of red chili flakes. This marinade can also be used on chicken, pork or tofu!
As for the vegetables, use whatever you have on hand, or what you can find. This is also a great dinner to make when you are cleaning out the fridge. A little bit of cabbage, carrots, bell peppers, mushrooms – really anything will help round out this shrimp and noodles. One thing that should definitely be included are the herbs. Ginger Sesame Shrimp Noodle Bowls
Ingredients
Ginger Sesame Dressing/Marinade
- 3 Tbsp Soy sauce
- 2 Tbsp Fresh grated ginger
- 2 Tbsp Rice wine vinegar
- 2 Tbsp Sesame oil
- 1 Tbsp Brown Sugar
- Red chili flakes optional
Noodle Bowl
- 8 oz Rice noodles
- 12 Shrimp Peeled and deveined
- 1/2 Cucumber chopped
- 1/2 Cup Red cabbage thinly sliced
- 1/4 Cup Carrot thinly sliced
- 1/4 Cup Bell Pepper chopped
- 1/4 Cup Cilantro
- 2 stalks Green onion sliced
- 2 Tbsp Mint chopped
Instructions
- Soak or cook rice noodles per the packing directions and set aside.
- To make the dressing, combine soy sauce, ginger, vinegar, sesame oil sugar and chili flakes into a bowl.
- Peel and devein shrimp, and add to a small bowl. Pour HALF of the marinade over the shrimp. Reserve the remaining for dressing on the bowl. Let shrimp marinade for 10 minutes.
- Meanwhile, chop and prep your vegetables.
- Heat cast iron pan over medium heat. Add shrimp and cook approximately 1.5 to 2 minutes on each side. They should be pink on the edges and starting to curl.
- To assemble noodle bowls, add the rice noodles, and drizzle sauce over them. Top with shrimp and veggies, and enjoy!
