Using bold flavors, these Ginger Sesame Shrimp Noodle Bowls can be whipped up quickly and easily, and customized with any veggies you have on hand!

Ingredients
Ginger Sesame Dressing/Marinade
3TbspSoy sauce
2TbspFresh grated ginger
2TbspRice wine vinegar
2TbspSesame oil
1TbspBrown Sugar
Red chili flakesoptional
Noodle Bowl
8ozRice noodles
12ShrimpPeeled and deveined
1/2Cucumberchopped
1/2CupRed cabbagethinly sliced
1/4CupCarrotthinly sliced
1/4CupBell Pepperchopped
1/4CupCilantro
2stalksGreen onionsliced

Instructions
Soak or cook rice noodles per the packing directions and set aside.
To make the dressing, combine soy sauce, ginger, vinegar, sesame oil sugar and chili flakes into a bowl.
Peel and devein shrimp, and add to a small bowl. Pour HALF of the marinade over the shrimp. Reserve the remaining for dressing on the bowl. Let shrimp marinade for 10 minutes.
Meanwhile, chop and prep your vegetables.
Heat cast iron pan over medium heat. Add shrimp and cook approximately 1.5 to 2 minutes on each side. They should be pink on the edges and starting to curl.
To assemble noodle bowls, add the rice noodles, and drizzle sauce over them. Top with shrimp and veggies, and enjoy!
Notes
The vegetables for this noodle bowl are easily interchangeable. You may also use zucchini, bean sprouts, corn, etc. as desired.
