Gorgonzola Pear Salad

I have been trying to make a conscious effort lately to make more salads. Yet even as I seek out new recipes, I find myself constantly falling back to the same formula: greens, fruit, nuts and cheese. And I’m not bothered by it at all – sometimes, that all it takes to make a delicious tasting salad! This Gorgonzola Pear Salad fits the method, and boy is it delicious.

When I came across some perfectly ripe pears at the store, I bought a bunch thinking I’ll figure out what to do with them later (if not juts eat them on their own). I find good pears to be pretty difficult to find, so I never pass them up if I see them. Craving a sweet and savory salad, I came across this recipe from Lemon Tree Dwelling. Not only did it sound delicious, but I also had all of the other ingredients on hand! I love it when that happens.

Gorgonzola Pear Salad

I made this recipe as it is with one change: I omitted the dried cranberries. This time of year, I seem to be putting dried cranberries in everything because they’re so delicious and perfect for fall/winter. Yet again, with the perfect pears in my possession, I didn’t want their flavor to get overpowered. I was a little bit skeptical of adding water to the dressing but I was pleasantly surprised. It mellowed out the sweetness and somehow managed to meld the sugar and acidic flavors into a very well balanced dressing. It didn’t taste watered down at all, it just helped combine all the ingredients. This recipe will be added to my regular rotation…at least while it is still pear season! Make this Gorgonzola Pear Salad and you won’t be sorry.
