I absolutely love chili. In the cold, darker months, I love how hearty, spicy, sweet and yummy chili is. I also really love squash. Winter squash is amazingly multi-purpose and you can toss it an endless amount of things. It brings with it a unique sweetness, and some hearty vegetable. This Crockpot Butternut Squash Turkey Chili is a lazy way to enjoy the rain and cool air while staying cozy at home.
Quick Waldorf Salad
I eat salads almost religiously for lunch Monday through Friday. It’s not forced though. The truth is, I love salads. I’ll blame my mom for this – she has a salad recipe arsenal that would satisfy any craving. I do sometimes get bored of a certain kind of salad, so I like to mix things up and make something different every now and then. And given the produce currently in season, I’ll probably be eating this super quick waldorf salad for the next month!
20 Minute Lentil Soup
Ah, the cool rainy (and sometimes sunny) days of Oregon fall have finally arrived. As much as I love the warmth of summer, the cooler months encourage me to relax and enjoy the simple pleasures a little but more. One of those simple pleasures is soup. This 20 Minute Lentil Soup is perfect for a crisp, cozy weeknight.
Vanilla Chai Pear Muffins
Autumn is here! Autumn is here! I won’t let the near 80 degree weather we currently have stop me from believing that. Tis the season for fall flavors, cozying up with a cup of tea, and a lot more baked goods. These Vanilla Chai Pear Muffins fit into all of those categories. And please believe me when I say these are one of the top three things I have ever baked.
