Lamb is one of those proteins that I rarely ever cook. It is pricier than other meats and honestly, begin able to find it around here is a little hit or miss. However, I do really enjoy it when I find it! These Pomegranate Glazed Lamb Loin Chops may seem fancy, but they are really, really easy to make. I promise.
The inspiration for these amazing Pomegranate Glazed Lamb Loin Chops came when I received some beautiful pomegranates in my Imperfect Produce delivery! (This is an amazing company helping reduce food waste, click here if you’re interested!) I’ve always thought lamb and pomegranates were a match made in heaven, so I set off on a hunt for the protein.
Overall, this dish requires less than ten ingredients and you get a complex decadent dish that you can serve alongside some potatoes and a fresh salad. So go get yourself some pomegranates and let me know what you think!
Pomegranate Glazed Lamb Loin Chops
Ingredients
Marinade
- 2 Lamb loin chops, bone in
- 1/4 Cup Orange juice
- 1/4 Cup Pomegranate juice
- 4 Mint leaves, torn
Glaze & Assembly
- 1/2 Cup Orange juice
- 3/4 Cup Pomegranate juice
- 1 1/2 Tbsp. Honey
- 3 Tbsp. Mint leaves, chopped
- 1/4 Cup Pomegranate Seeds
- Salt and pepper
Instructions
- In a small bowl or ziploc, combine the orange juice, pomegranate juice and mint leaves for the marinade. Add the lamb chops. Cover and refrigerate for 1 hour, or as long as overnight.
- Preheat oven to 350 degrees F. Season marinaded chops with salt and pepper and heat cast iron skillet over medium high heat. Sear lamb chops in pan for 3 minutes on each side.
- Place skillet in oven and bake for 5-10 minutes until internal temperature reads at least 145 degrees.
- Meanwhile, in a nonstick skillet, combine the glaze ingredients: 1/2 cup orange juice, 3/4 cup pomegranate juice, and 1 1/2 Tbsp. of honey.
- Cook over medium heat for about 10 minutes stirring frequently. Let it reduce until it begins it bubble and thickens, but do not let it burn.
- Once done, place lamb chops on plate, cover with glaze, and top with mint leaves and pomegranate seeds.

As it’s currently 78 degrees F here, I opted to grill them to keep them temp lower in my house!
With your recipe calling for the sauce to be made separately in a pan, substituting the oven for the grill!
