These Pomegranate Glazed Lamb Loin Chops are a decadent dinner that is sure to impress. A simple protein with a simple glaze combines to create a succulent dish.

Ingredients
Marinade
2Lamb loin chops, bone in
1/4CupOrange juice
1/4CupPomegranate juice
4Mint leaves, torn
Glaze & Assembly
1/2CupOrange juice
3/4CupPomegranate juice
1 1/2Tbsp.Honey
3Tbsp.Mint leaves, chopped
1/4CupPomegranate Seeds
Salt and pepper
Instructions
In a small bowl or ziploc, combine the orange juice, pomegranate juice and mint leaves for the marinade. Add the lamb chops. Cover and refrigerate for 1 hour, or as long as overnight.
Preheat oven to 350 degrees F. Season marinaded chops with salt and pepper and heat cast iron skillet over medium high heat. Sear lamb chops in pan for 3 minutes on each side.
Place skillet in oven and bake for 5-10 minutes until internal temperature reads at least 145 degrees.
Meanwhile, in a nonstick skillet, combine the glaze ingredients: 1/2 cup orange juice, 3/4 cup pomegranate juice, and 1 1/2 Tbsp. of honey.
Cook over medium heat for about 10 minutes stirring frequently. Let it reduce until it begins it bubble and thickens, but do not let it burn.
Once done, place lamb chops on plate, cover with glaze, and top with mint leaves and pomegranate seeds.
