Quick Waldorf Salad

I eat salads almost religiously for lunch Monday through Friday. It’s not forced though. The truth is, I love salads. I’ll blame my mom for this – she has a salad recipe arsenal that would satisfy any craving. I do sometimes get bored of a certain kind of salad, so I like to mix things up and make something different every now and then. And given the produce currently in season, I’ll probably be eating this super quick waldorf salad for the next month!

Waldorf salads have such a perfect amount of crunch to them. I’m a sucker for “toppings” on my salads, and so I love how waldorf salads are minimal greens, and alllll the goodies. Crunchy apples and celery pair so well with the sweet grapes and chicken. Not to mention the glazed walnuts. It’s so satisfying and leaves you feeling energized. This dressing is pretty powerful stuff. Nice and flavorful with no mayonnaise! It’s a kicked up balsamic vinaigrette, but these hearty salad ingredients can handle it.

Quick Waldorf Salad

Quick Waldorf Salad

This quick waldorf salad is great for meal-prepping and is filled with fruits and veggies and protein. The no-mayo dressing is light but flavorful.
Servings 5 Servings

Ingredients

Salad

  • 2 Cups Cubed cooked chicken breast
  • 1 1/4 Cup Red grapes, halved
  • 1 Cup Celery, diced
  • 1 Cup Apples, diced
  • 5-6 Oz Mixed Greens
  • 5 Tbsp. Gorgonzola Cheese
  • 1 Cup Glazed Walnuts*

Salad Dressing

  • 1/3 Cup Balsamic Vinegar
  • 1/3 Cup Olive Oil
  • 1 clove Garlic, minced
  • 1 1/2 tsp. Dijon Mustard
  • 1/4 tsp. Salt
  • 1/4 tsp. Black pepper
  • 1/2 tsp. White Sugar

Instructions

  • In a large bowl, mix together the chicken, celery, apple and grapes. Set aside.
  • In a small bowl, make the salad dressing. Whisk together the vinegar, olive oil, garlic, mustard, salt, pepper and sugar.
  • Put a bed of mixed greens on each plate, and top with the chicken/apple/grape mixture. Top with gorgonzola cheese and glazed walnuts. Drizzle dressing on top and serve.

Notes

*Make your own glazed walnuts: In a sauté pan, add 1 cup of walnuts, 2 Tbsp. brown sugar and 1/2 Tbsp. of butter. Cook for about 7 minutes over medium heat, stirring frequently. Pour onto parchment paper to let cool.

This Quick Waldorf Salad is so easy to throw together for a weeknight dinner. And the mayonnaise free dressing adds an extra kick of flavor.

    I love salads with all the fixings too. This Waldorf salad looks delicious and I love how it doesn’t have the typical heavy dressing that comes with it. Yum!

      This is also yummy without the greens, then it’s more of a hearty chop salad!

    Really good and so filling. The grapes added the perfect touch of sweetness. The best part was how light the dressing was so I could taste all the flavors. I love a new salad!
