This quick waldorf salad is great for meal-prepping and is filled with fruits and veggies and protein. The no-mayo dressing is light but flavorful.

Salad
2CupsCubed cooked chicken breast
1 1/4CupRed grapes, halved
1CupCelery, diced
1CupApples, diced
5-6 OzMixed Greens
5Tbsp.Gorgonzola Cheese
1CupGlazed Walnuts*
Salad Dressing
1/3CupBalsamic Vinegar
1/3CupOlive Oil
1cloveGarlic, minced
1 1/2 tsp.Dijon Mustard
1/4tsp.Salt
1/4tsp.Black pepper
1/2tsp.White Sugar
Instructions
In a large bowl, mix together the chicken, celery, apple and grapes. Set aside.
In a small bowl, make the salad dressing. Whisk together the vinegar, olive oil, garlic, mustard, salt, pepper and sugar.
Put a bed of mixed greens on each plate, and top with the chicken/apple/grape mixture. Top with gorgonzola cheese and glazed walnuts. Drizzle dressing on top and serve.
