I don’t know about you but I have been really enjoying a lot of squash this fall, and plan to continue throughout winter. There are so many varieties can be be used in such different ways, but acorn squash may be one of my favorites right now. It is so buttery and sweet and pairs really well with savory flavors. This Sausage Apple Stuffed Acorn Squash makes for a perfect weeknight meal and is really simple to make.
Done in about a half hour, this stuffed squash recipe uses simple flavors that come together to create one yummy dish. Also, this keeps well and can be reheated the next day for lunch, so its a good idea to double up on this recipe and enjoy the leftovers! Enjoy!

Sausage Apple Stuffed Acorn Squash
This Sausage Apple Stuffed Acorn Squash is a perfect weeknight dinner for two. Simple ingredients that yields a flavorful and delicious meal.
Servings 2 Servings
Ingredients
- 1 Acorn Squash
- 1/2 lb. Ground sausage
- 3 sprigs Fresh thyme
- 1 Yellow onion, small, diced
- 1/2 Apple, diced
- 2 Tbsp. Parmesan Cheese
- Salt and pepper
- 2 Tbsp. Olive Oil
Instructions
- Preheat oven to 400 degrees F and line baking sheet with foil.
- Cut acorn squash in half lengthwise and remove seeds. Drizzle inside of squash with olive oil and season with salt and pepper.
- Place cut side down on baking sheet and bake for 16-18 minutes until it begins to soften.
- Meanwhile, heat a drizzle of olive oil in a skillet over medium heat. Add onion and sautee for 3 minutes until fragrant.
- Add sausage and cook for 3-4 minutes until the meat has cooked through.
- Then add diced apple and the three sprigs of thyme. Stir and cook for 2 more minutes and then discard the thyme.
- When the squash is done, remove from oven and flip over. Fill with the sausage mixture and top with parmesan cheese. Return to oven and bake for 5 minutes.
- Remove and serve warm.
