This Sausage Apple Stuffed Acorn Squash is a perfect weeknight dinner for two. Simple ingredients that yields a flavorful and delicious meal.

1Acorn Squash
1/2lb.Ground sausage
3sprigsFresh thyme
1Yellow onion, small, diced
1/2Apple, diced
2Tbsp.Parmesan Cheese
Salt and pepper
2Tbsp.Olive Oil
Instructions
Preheat oven to 400 degrees F and line baking sheet with foil.
Cut acorn squash in half lengthwise and remove seeds. Drizzle inside of squash with olive oil and season with salt and pepper.
Place cut side down on baking sheet and bake for 16-18 minutes until it begins to soften.
Meanwhile, heat a drizzle of olive oil in a skillet over medium heat. Add onion and sautee for 3 minutes until fragrant.
Add sausage and cook for 3-4 minutes until the meat has cooked through.
Then add diced apple and the three sprigs of thyme. Stir and cook for 2 more minutes and then discard the thyme.
When the squash is done, remove from oven and flip over. Fill with the sausage mixture and top with parmesan cheese. Return to oven and bake for 5 minutes.
