Every week I try my hardest to meal prep and make sure I have lunches and some dinners ready to go and ready to eat. But of course, that’s not realistic every single week… So one of my favorite lunches to grab near my day job office when I didn’t make anything to bring with me is a killer steak salad. It’s simplicity is really what got me. But the more I started getting this salad, the more I realized I should just make it myself at home! And here is is: the Ultimate Steak Salad.
This salad is so simple. Nothing out of the ordinary, no wild flavors, but at the same time, he ingredients all go so perfectly together. It is an energizing high protein meal and absolutely choc full of vegetables. The balsamic dressing is light and ties everything together. This ultimate steak salad is the perfect mid-week lunch, or a quick dinner after a busy day.
Ultimate Steak Salad
Ingredients
Salad
- 1 lb Lean steak (Sirloin or round)
- Salt and pepper
- 1 15 oz can Black beans, drained
- 1 14.5 oz can Sweet Corn Kernels
- 2 Avocados
- 1 1/2 Cups Cherry tomatoes
- 4 oz. Pepper jack cheese
- 1 Cup sliced mushrooms
- 5 oz Mixed Greens
Balsamic Dressing
- 1/4 Cup Balsamic Vinegar
- 1/4 Cup olive oil
- 1/2 tsp. Dijon Mustard
Instructions
- Heat a cast iron skillet over medium heat. Season steak with salt and pepper and sear in hot pan for about 3-4 minutes on each side, or until internal temperature reaches at least 145 degrees. Let rest.
- Meanwhile, mix the balsamic vinegar, olive oil and mustard in a bowl until combined. Set aside.
- Assemble the salad by placing portions of the remaining ingredients and sliced steak on top of the mixed greens. If serving immediately, top with balsamic dressing.
