1lbLean steak (Sirloin or round)
Salt and pepper
115 oz canBlack beans, drained
114.5 oz canSweet Corn Kernels
2Avocados
1 1/2CupsCherry tomatoes
4oz.Pepper jack cheese
1Cupsliced mushrooms
5ozMixed Greens
Balsamic Dressing
1/4CupBalsamic Vinegar
1/4Cupolive oil
1/2tsp.Dijon Mustard
Instructions
Heat a cast iron skillet over medium heat. Season steak with salt and pepper and sear in hot pan for about 3-4 minutes on each side, or until internal temperature reaches at least 145 degrees. Let rest.
Meanwhile, mix the balsamic vinegar, olive oil and mustard in a bowl until combined. Set aside.
Assemble the salad by placing portions of the remaining ingredients and sliced steak on top of the mixed greens. If serving immediately, top with balsamic dressing.
Notes
*If making ahead as meal prep, add the avocado and dressing immediately before serving.
