These garlic dill roasted potatoes are foolproof and flavorful. Crispy on the outside and soft on the inside, they make the perfect side dish to any meal.

1lbBaby potatoes
2Tbsp.olive oil
2Tbsp.Fresh dill, chopped
1/8tsp.Fresh ground black pepper
1/4tsp.salt
3Garlic cloves, minced
Instructions
Preheat oven to 425 degrees F and line a baking sheet with parchment paper.
Fill a large pot with water and bring to a boil over high heat. Cut baby potatoes into quarters and place in boiling water. Cook for 8 minutes.
Strain and place potatoes in large bowl. Drizzle with olive oil and add salt, pepper, garlic and fresh dill. Mix until the potatoes are well coated.
Spread into a single layer on prepared baking sheet. Bake at 425 for 20-22 minutes stirring once about halfway through. Potatoes should be browned and crispy on the outside. Remove from oven and serve hot.
