These Triple Chocolate Peppermint Cookies are rich and full of dark chocolate, milk chocolate and white chocolate - perfect for the holiday season.

Ingredients
1/2CupButter
1/3Cupwhite sugar
2Tbsp.Brown sugar
1egg
1tsp.Vanilla extract
1cupall-purpose flour
1/3CupDark Chocolate Cocoa powder
1/2tsp.Baking soda
1/8tsp.salt
1CupMini chocolate chips
1CupWhite chocolate (for melting)
1/4CupCrushed peppermint candy
Instructions
In a large bowl, cream butter, white sugar and brown sugar until fluffy. Mix in eggs and vanilla.
In a small bowl, combine flour, cocoa powder, baking soda and salt. Stir flour mixture into butter mixture until it forms a firm dough.
Mix in mini chocolate chips. Cover a refrigerate for 1 hour.
Preheat oven to 350 degrees F. Roll dough into small balls and place on ungreased baking sheet. Bake for 9 minutes. Let cool on cookie sheet before transferring to wire racks.
Meanwhile, melt white chocolate over a double broiler or in the microwave. Spoon a half tablespoon or so onto the tops of each cookie. It should thicken like frosting.
Before it hardens, sprinkle crushed peppermint on top. Store in an airtight container for up to 5 days.
Notes
*These cookies can be frozen before the white chocolate and peppermint are added.
