Servings 3Dozen
Ingredients
1CupButter, softened
1/2CupBrown Sugar
1/4CupWhite Sugar
1Egg
1tsp.Vanilla Extract
2 14CupsAll-purpose flour
1/2tsp.Baking Powder
1/2tsp.Salt
1/2CupChocolate chips
1/3Cup Sprinkles of choice
Instructions
In a large bowl, cream the butter and sugars together. Then mix in the egg and vanilla.
Add in the flour, baking powder and salt slowly, stirring until the dough is well combined. Cover bowl and place in refrigerator for 1 hour.
Preheat oven 350 degrees F. and line baking sheet with parchment paper.
Roll about 1 tsp. of dough into little balls and place on baking sheet. Then gently press each one down to slightly flatten.
Pour sprinkles into a small bowl. Dip one side of each cookie into sprinkles, and return to baking sheet. Once they have all been sprinkled, place in oven and bake for 6 minutes.
Remove from oven and let cool on baking sheet for about 2 minutes before removing.
Once cookies are cooled, melt the chocolate over a double broiler or in a microwave. Put 1/2 tsp. of chocolate on the non-sprinkled side of half of the cookies, and sandwich it with a second cookie. Continue until they have all been sandwiched.
Let sit for about 15 minutes for the chocolate to set, then enjoy!
