Easy and inexpensive, these 4 ingredient Cranberry Apple Stuffed Pork Chops scream fall and are a great weeknight dinner.

Ingredients
4Boneless pork chops, thick cut
1/2CupBlue cheese
1/4CupDried cranberries
1/4CupApple, finely chopped
1TbspOlive oil
Instructions
Preheat oven to 350 degrees F. In a small bowl, combine the cheese, cranberries and apples.
With a sharp knife, slice your pork chop lengthwise on one side. Do not slice all the way through, it should create a pocket, like a pita.
Heat 1 Tbsp of oil over medium heat. Season chops with salt and pepper and sear for 3 minutes on each side.
Place chops in baking safe dish. Carefully spoon about two Tbsp of filling into each pork chop. Use a toothpick to help close the sliced part and keep it together. (You can use tongs, an oven mitt or a piece of foil to help hold them if they are too hot.)
Place in oven and bake for 25-30 minutes until internal temperature 145 degrees F.
