This super simple dish is a great way to use up your summer produce. Quick preparation with a pow of flavor.

Ingredients
2Peaches, diced
1-2Jalapenos, chopped(spice to taste)
1/4CupMinced Shallot
1/2CupChopped red bell pepper
2TbspLime juice
2TbspFresh cilantro leaves
Salt and pepper
5Bone-in Pork Chops
Instructions
In a medium size bowl mix together the peaches*, jalapeƱo, shallot, bell pepper, lime juice and cilantro and salt. Stir and let sit in refrigerator.
Heat a large cast iron skillet with some oil over medium heat. Season pork chops with salt and pepper. Sear in pan for 2-3 minutes on each side until cooked through.
Let rest for 5 minutes, top with salsa, and serve.
Notes
* For extra flavor, grill your peaches before dicing!
