This meatless dish is perfect for a busy weeknight and will leave you satisfied. Spicy Sweet Potato Black Bean Tacos are easy, flavorful and reheat well!

Ingredients
2 1/2CupsSweet potato, diced
1CanBlack beans, drained and rinsed
1Jalapeno, chopped
2Tbsp.olive oil
1/2tsp.Chili powder
1/4tsp.Cayenne Pepper
1/4tsp.Garlic Powder
1/2tsp.Cumin
Salt and pepper to taste
12Corn tortillas
1BunchCilantro
1CupCorn kernals
Pickled red onions
Instructions
In a large skillet, heat olive oil over medium high heat. Add diced sweet potatoes and cook for about 6 minutes, stirring a couple times.
Reduce heat to medium and add jalapeno, black beans, spices, and salt and pepper to taste. Cook for 2 minutes, until everything is heated through. Remove from heat.
Fill warm corn tortillas with the sweet potato black bean mixture, and top with corn, pickled red onions and cilantro, or your own favorite toppings.
