This Pork Tenderloin with Raspberry Chipotle Sauce is a great summertime meal. Fresh berries add sweetness and the chipotle is smoky with a hint of spice.

1Tbsp.olive oil
3-4lb.Pork tenderloin
Salt and pepper
6ozFresh raspberries
1-2Chipotle peppers in adobo sauce, diced (canned)
1Garlic cloves, minced
2Tbsp.Honey
1Tbsp.Water
1tsp.Apple cider vinegar
Instructions
Preheat oven to 350 degrees. In a large cast iron skillet, heat oil over medium high heat. Season pork tenderloin with salt and pepper.
Sear pork for 7 minutes on each side. Then place in oven and finish for about 25 more minutes, until the internal temperature reaches 165 degrees F.
While the pork is in the oven, combine the raspberries, chopped chipotle peppers, minced garlic, honey, water and vinegar in a small sauce pan.simmer on medium low for about 10 minutes, mashing the berries halfway through.
When pork is done, let rest for 5 minutes before slicing. Serve with raspberry chipotle sauce spooned over the pork.
