Using a double boiler, melt white chocolate chips, stirring frequently (About 5 minutes). You may also melt the chocolate in the microwave stirring every 30 seconds until melted.
Once chocolate is melted remove from heat and add food coloring until it has reached a bright green color.
Using a spoon or spatula, cover 1/2 to 2/3 of each pretzel rod with colored chocolate, just enough to cover the pretzel.
Immediately cover in sprinkles, and place on parchment paper. Gently press 4 cheddar bunnies on each stick. Repeat until pretzels or chocolate runs out. This makes about 12-15 sticks.
Let sit for 5 minutes until chocolate is hardened. Serve immediately or store in airtight container for up to 3 days.
