Steak, mushrooms and crepes all rolled into one...literally!

Ingredients
2Tbsp.olive oil
1Small onion, sliced
1cupMushrooms, sliced
8ozTop Sirloin, beef fillet
Salt & Pepper

Instructions
In a large skillet or cast iron pan, heat 1 Tbsp. olive oil on medium high heat. Sautée onions until browned and starting to caramelized, about 5-7 minutes. Add mushrooms and sautée for 3 additional minutes. Set onions and mushrooms aside in a bowl and cover in foil to stay warm.

Preheat oven to 350 degrees F. Season both sides of fillet with salt and pepper.
In same pan, add 1 Tbsp. olive oil. and heat to medium-high. Add steak and sear for 4 minutes on each side. Put skillet in preheated oven for 4 additional minutes, or until steak reaches an internal temperature of at least 135 degrees F.
Remove steak from oven and let rest for 5-10 minutes. Slice thinly.
Divide steak and onions and mushrooms into 10 crepes. Roll and serve hot.
