Preheat oven to 425 degrees F and grease a cookie sheet. In a bowl, combine all ingredients except for the sour cream/yogurt.
Roll mixture into balls and place on cookie sheet. Flatten to about 1/4 inch thickness.
Bake in oven for 10 minutes, then flip each latke with spatula. Put back in oven and cook for another 8-12 minutes until firm. Serve alongside sour cream or greek yogurt.
