This succulent burger is extremely flavorful and is freshened up by the mint basil pesto.

Ingredients
Mint Basil Pesto
1cloveGarlic
1/4cupMint leaves
1/2cupBasil leaves
2Tbsp.Pine nuts
2Tbsp.Parmesan cheese
3Tbsp.Olive oil
1Tbsp.Lemon juice
Lamb Burger
1lb.Ground lamb
3/4tsp.Ground coriander
3/4tsp.Cumin
1/8tsp.Ground Cinnamon
Salt and Pepper
1Tbsp.Olive oil
1Small onion, sliced
3Buns of choice
Instructions
Add all of the pesto ingredients to a blender or food processor. Blend for about 2 minutes or until it is well mixed. If the consistency is too thick, add more olive oil 1 tsp at a time. Set aside.
In a small sautee pan, Heat a little bit of olive oil and the sliced onion. Cook over medium heat for about 10 minutes stirring occasionally. Set aside.
In a medium size bowl, combine the lamb, coriander, cumin, cinnamon and salt and pepper. Mix with hands until spices are well distributed, but do not over squeeze the meat. Form ground meat mixture into 3 patties.
Heat a cast iron skillet or pan over medium high heat. Add 1 Tbsp. olive oil. Place all three patties in the pan and cook for 3 minutes on each side. If meat has not reached 165 degrees, place skillet in a 350 degree oven until it has reached your desired temperature.
To serve, spread pesto on both sides of the bun and add the burger patty and onions. Serve hot.
